At the moment, we proudly source our meats from six exceptional farms—five located in Florida and one in the Hudson Valley, NY. Below, you'll find pictures of some of the cuts we consistently offer, along with a list of items we typically have on hand. As a whole animal butcher shop, we encourage you to call and inquire about specific items you may be interested in, whether it's a variety of offals, specific pork cuts, or large roasts. We're here to cater to your unique culinary needs.


Pasture Raised Angus & Wagyu options avilable

We currently stock these beef items- Tenderloin, Strip loin, Ribeye, Short Ribs, Chuck Roast, Stew Meat, Ground Beef, Shank Osso Buco, Eye Of Round, Rump, Sirloin, Pichana, Flank, London Broil, Flat Iron, Tri-Tip, Skirt, Brisket, Beef Fat. Dry Aged options include Porterhouse, T-bone, Bone in New York, Bone in Ribeye, Delmonico; limited production for the dry age. 



Pasture Raised Berkshire Hogs

We bring in whole hogs bi-weekly and butcher them here entirely. We consistently offer; Rib chops, Sirloin Chops, Belly, Coppa Steaks, Belly Chops, Cheeks, Picnics, Boston Butts, Leaf Lard, Liver, Kidney; Anything you request we can do. We make various fresh sausages utilizing the hogs shoulders and hams. 


La Belle Farm. Up-State New York


We source beautiful heritage breed Red Bro chickens that are raised on open pasture. We carry La Belle farm Orvia ducks as well as their Foie Gras.
